What We've Been Up To...






August 10, 2015 Last week was our 5th wedding anniversary! We've been talking about hiking to Hanging Lake for a couple of years now, so we finally decided to just go for it! We planned the rest of our trip around that. Hard area to hike in because everything is super steep but it's SO worth it. We camped and hiked all weekend, were able to meet up with some family, walked around town, ate ice cream, drove to Aspen to see the scenery and have dinner, and did a 3-hour Off-Road Segway tour. My face hurt from smiling and laughing, those Segways were the most fun we've had in a long time...HIGHLY recommend it if you have the chance! We live in such a beautiful country! 



July 2015: We had a blast participating in the Bubble Run 5K this last weekend. It was a mix of my family, Evan's  family and some friends. It was "good, clean fun!" as they called it.



July 6, 2015: We had a great 4th of July weekend! We started out Friday making BBQ pizza and having SMORES, watching Jurassic World and Tomrrowland at the a drive-in Friday night.  We watched fireworks, had dinner with Evan's family on Saturday, went to church on Sunday where we sang Patriotic songs, which are some of my favorites, and then drove to my grandparents farm for a picnic with a cousin that didn't make it to the family reunion last week but was able to come with her kids from the east coast this week. I haven't seen her in years! Such a fun weekend.



June 27: Jen’s family reunion was last Saturday at her grandparent’s farm. A campground has been made for family use, it’s a lot of fun! We had a good time visiting with lots of aunts, uncles, cousins, and grandparents. We had a dutch-oven potluck cookout, it was delicious! For this potluck we made dutch-oven beef enchiladas. 
The next day we had another family dinner at Evan's house, we also did a dutch-oven potluck. We ate sooooooo much good food this last weekend! Camp food is the best! For this potluck we made dutch-oven chicken nachos. 


June 21: Having a lot more time in the summer can cause people to do crazy things...like make a picnic blanket out of old jean, lol. Monday I got all the squares cut out. Tuesday and Wednesday I got most of them pinned together. Thursday and who know when I will get it sewn together. Pictures to come! This is the first thing I have sewn in YEARS! We'll see how it turns out.


June 11, 2015: Tuesday morning my (Jen's) little brother, who is a long distance trucker, called and he ended up staying over for 2 nights because he needed to rest his truck for 34 Hours. We had a fun couple of days! We checked out his truck (my sister & her kiddos came to see it, my 3.5 year old nephew thought it was so cool!), spent the morning at our grandparents farm, played some games, and ate a lot of bacon because you can't be around my brother and not eat bacon, lol. I totally lost Scrabble but it was fun!



June 8, 2015: Evan and I have been soooo sick the last 2 weeks! We don't get sick very often, so for us to both be sick at the same time was WEIRD. As I began to get better, I had to find ways to entertain myself around the house because Evan was still sick, so I made pie one day, we watched a lot of Netflix, I tried new recipes, cleaned the house, weeded, etc. This summer I am not working so it's going to be interesting to keep myself busy! I'm off to a good start. I'm starting tutoring this week, I tutor a 9 year old in reading and math. I tutored 2 other students last summer, but schedules are getting in the way. Maybe I'll pick up some more, who knows? Anyways, I'm pretty proud of my pie. I made a strawberry rhubarb pie with strawberries and rhubarb right from my own yard. I love feeling accomplished! I even played around with the pie dough and decided to try and braid it. Kinda fun, but I need practice. I love making food into art.


May 29, 2015: I (Jen) made it through another school year! It was fun being an aide to kindergarten, they say the funniest things. There is never a dull moment. Summer will be relaxing, still trying to figure out how to keep myself busy.

May 22, 2015: Yesterday my (Jen) sister and her 2 kids came over to hang out. We had a fun time. We had a Wii dance party (the kiddos loved dancing to "What Does the Fox Say", "Let It Go" from Frozen, and "Happy"), played with our dog, and my 3 year old nephew helped me make the bread for dinner. Evan and I ate delicious pesto chicken calzones for dinner at a restaurant last time we were out of town and I decided to try to make them. They turned out yummy! My nephew was an excellent helper. He kept track of how many cups of flour I put in. It was a fun afternoon.

May 20,2015: We had a blast down in Southern Utah this last weekend! We did some off-roading, hiking, camping, and dodging rainstorms. My (Jen's) parents came from Oregon and haven't really been down there much. There's a remarkable, unbelievable story about the pioneers back in 1880ish (They are called the Hole-in-the-rock pioneers, you should Google it) and we love that story so we went to see part of their trail and where they went through the Hole in the Rock with their wagons. It took us 2.5 hours to drive 54 miles on a dirt road to get there, but it was amazing and so worth it!

May 11, 2015: We finally got our garden planted tonight! We planted purple potatoes, beets, onion, carrots, squash, pumpkin, cantaloupe, and watermelon. Yum!! Hopefully it's a good harvest come fall time. This is our first time planting one at our house, hopefully it grows well!  At least it was planted with love. It's fun working oh the garden together.

(Update from May 30: Our potatoes, beets, and onions are already coming up like crazy! We've been eating our strawberries that come up every year already, and our rhubarb plant is HUGE! I think we're going to have a good harvest. The spring rains we've been having have helped!)







April 17, 2015: This weekend we went to the drive in! Evan's little brother and his date came with us, we had so much fun. Makes it feel like summer is starting even though we have a couple more months. We LOVE the drive in. We saw Home and Cinderella. I loved the new Cinderella movie, it was so cute and had such a great message. We tried to take a fun picture but it doesn't work so well in the dark lol!

April 5, 2015: We had a ton of fun this weekend with a spur of the moment Easter road trip to Oregon to surprise Jen's family! Jen's sister and her family were there for Easter also so we wanted to go too! We did all the fun Easter festivities, went to the beach (and it was BEAUTIFUL weather! We played in the waves for like 2 hours!), watched our church's General Conference, and had a lot of fun with family and delicious food. It was great, we opened the door and let our dog run inside to greet everyone before we walked in. They were totally surprised! Just wish we could have seen their facial expressions!
